Oreo Balls
Cucumber Salad
This side salad is quick, fresh and addicting. Especially with both cucumber and tomatoes at peak season, this veggie side will be devoured in no time. I actually got both of these side dishes from our friend's mom who really knows her stuff in the kitchen.
The salad calls for:
3 tomatoes,
1-1 and a half cucumbers,
feta cheese,
garlic salt,
pepper,
and salad supreme. (which is in the spice section)
chop and mix to taste and voila!! mmm! I'm going to go make me some right now!

Parmesan Grilled Veggies
I may be in love with parmesan cheese. I always need it in my fridge-it's a go to. I may be too generous with it, but I put it on a dish and I instantly like the meal 2x's more.
Well, these are easy and delish. All you do is poor finely ground parm. cheese into a bowl with olive oil and mix to a thick consistency,( add more parm. if needed) then dab on your grilled veggies when they are on the grill. With this meal I dabbed it on everything excluding our rice and salmon. Everything from corn, zucchini and veggies kabobs. You won't regret it;) The bottom picture was actually taken as an after note, after dinner, so the rest of the veggies had been devoured. The top picture was my 10:30 pm craving the next night- that Dan was a sweetheart to grill up for me! And don't worry. I ate that whole plate!

Watermelon Salsa
This isn't exact measurements... You need to mix and taste as you go. Everyone likes it how they like it.
INGREDIENTS:
1 small seedless watermelon
1 jalapeno pepper
3/4 of a green pepper
1/2 of an onion (optional)
garlic salt (to taste)
onion salt (to taste)
cumin to taste
a pinch of pepper
2 limes
cilantro (to taste and for color)
DIRECTIONS:
1-Take out the inside of your watermelon and use it as your bowl.
2-In a separate bowl mix up above ingredients.
3-Just taste as you go and see what you like.
You really can't mess it up

Chocolate Swirl Banana Bread
( If you follow the recipe than your bread actually won't look like these. We make this on a weekly basis, so sometimes my steps skip around and I'll throw in a zucchini or two. ;) Gotta love cooking deceptively- but nutritiously and delicious! L will usually eat her own loaf within a couple of days.)

Ingredients:
2 c. Flour
1/4 c. sugar
2 tsp. baking powder
1 tsp. baking soda
Pinch of Salt
1 cup chocolate chips + a few extras for the top ( I use a mixture of milk and white)
2 cups of ripe bananas ( about 4)
1/2 cup melted butter
1/4 c milk
2 eggs
Steps:
-Preheat oven to 350 degrees
-In a large bowl, stir together flour, sugar, baking powder, baking soda, salt and chocolate chips. Set aside.
-In another bowl, mix together bananas, butter, milk and eggs. pour over flour mixture and stir just until combined.
-Divide between 2 loaf pans.
-Sprinkle additional chocolate chips on top (up to you how much).
- Put loaves in oven for 3 minutes. Remove and run a butter knife through each loaf lengthwise and widthwise to swirl the chocolate around. ( I used a sawing motion so I didn't drag the batter all over the place.)
-Return loaves to oven and bake for another 20-25 minutes, or until toothpick comes out clean.

Whole Wheat Waffles
Ingredients:
1 cup of whole wheat- I grind a bunch at the beginning if the week.
1 cup of milk
2 tsp. Of baking powder
1/2 tsp. Of salt
1 tbsp. Of sugar
1 egg
2 tbsp. of oil
(Additional: finely sliced bananas-soo yummy)
Mix all together- I use my blender, then pour on skillet. I set mine to 300.
We then like to top ours with either mapel syrup and a tiny bit of powdered sugar, coconut syrup, or homemade blackberry jam and whip cream.

Summer Berry Salad
Throw these delicious berries into any salad and you'll be sure to make it a hit. I actually just made this up with what was in the fridge, and luckily it turned out to be pretty darn tasty.
INGREDIENTS:
Note: The salad dressing makes a lot so you can add as much or as little lettuce as you need
- 1 20 oz bag spinach
- 1 head of red leaf lettuce
- Blackberries
- Raspberries,
- sliced strawberries
- 1 bunch green onions
- candied nuts (I used sliced almonds) caramelized with half brown/white sugar
- mozzarella cheese
- Parmesan cheese
- 2 avocado's chopped into cubes
DRESSING:
1/2 cup red wine vinegar
1 cup white sugar
2 teaspoon dry mustard
a little less than half of a sweet onion
1 cup canola oil
1 1/2 teaspoon salt
*blend together in blender and chill before serving
*stir in avocado very last
